Percent Calcualtion on Filtered Dimensions

Let's say I have a Product dimension on the Color shelf, a Reporting_Date dimension on the Column shelf and a Sales_Amount measure on the Row shelf. I want to see a percentage of Sales for each product, so I do a Table Calculation (Percent of Total, Table Down) and that's fine.

Now I want to remove some products from the view, so I filter them. But when I do that the percentages change. Tableau has changed the denominator to include only the products that weren't filtered. Question is: how can I filter some products and have percentages calculated on the entire table (including products that are filtered)?

Well, the short answer is that in Tableau 3.6 you can't. Filters are always applied prior to percentage computations. Tableau 4.0 (now in Beta) will provide you with a way to do this, although it is somewhat inelegant. This is definitely a feature we are working toward.
